Double Chocolate Cabernet Cherry Cookies |

These came about when I was torn between Annacia's Chocolate Cherry Merlot Brownies and cookies for a family gathering. They turned out soooo :yummy:, and aren't all that unhealthy to boot! Ingredients:
1/3 cup smart balance butter spread |
1/2 cup brown sugar |
1/2 cup sugar |
1 egg |
1 teaspoon vanilla extract |
1 cup flour |
1 cup whole wheat flour |
3/4 cup cocoa powder |
1 teaspoon salt |
1 teaspoon baking soda |
7 ounces baking chocolate (63% cacoa) |
1/2 cup dry red wine |
2/3 cup dried cranberries (cherry flavored if possible) |
Directions:
1. Preheat oven to 375. 2. In a small bowl soak cranberries in wine for 5-10 minutes. 3. In a large bowl, cream sugars and Smart Balance. 4. Add egg and vanilla; beat well. 5. Make a well in the center of the bowl and combine dry ingredients, then incorporate into sugar mixture. 6. Fold in chocolate and cranberries. 7. Drop in even tablespoons onto a greased cookie sheet. 8. Bake 8-10 minutes then cool. |
