A simple, butttery waffle recipe loaded with fresh summer berries! Ingredients:
2 cups flour |
1/2 cup corn starch |
1t baking powder |
2t baking soda |
about 1t salt |
3t raw sugar |
2 cups buttermilk |
3 eggs |
1t vanilla |
1 stick butter, melted and slightly cooled(you can use oil or decrease this a bit, if you need to) |
1 cup mixed fresh berries(i used blueberries and raspberries) |
Directions:
1. In large bowl, combine flour, corn starch, baking powder,, soda, salt and sugar and give it a lil whisk to combine. 2. In another large bowl, beat eggs and add vanilla and butter and mix well. 3. Add butter milk and mix once more. 4. Pour wet ingredients into the dry ones and mix slowly and carefully just until blended. Don't over mix. There might be a couple lil lumps, and that's okay. 5. Fold in berries. 6. Cook on prepared waffle iron until lightly golden brown. 7. (to make waffles for a crowd, which I prefer over pancakes, I will put each waffle on a heat safe plate as it's done, place a half sheet paper towel over it, and let them rest in the oven set at about 150-170 as I make all the rest. |
