This is a very nice and comforting soup. So full of great beany, bacony and herb flavors. We love it and hope you do as well. I serve this with jalapeno cornbread and both are very well received and always eaten right up. Read more . Enjoy Ingredients:
4 strips bacon cooked and chopped |
1 can white kidney beans |
1 can black beans |
1 fresh tomato crushed |
3 cups vegetables stock |
1 medium red onion |
4 cloves garlic |
4 green onions |
4 stalks celery |
1 large carrot |
3 ears fresh corn kernels cut off ears |
1/4 cup fresh coriander |
1 teaspoon salt |
2 teaspoons freshly ground black pepper |
3 tablespoons grated pepper jack cheese |
1 large fresh jalapeno pepper minced |
Directions:
1. Combine all ingredients in a large soup pot and simmer for 30 minutes. When ready to serve put into soup bowls and sprinkle cheese and jalapenos over top and serve immediately. |
