Ingredients:
4 large baking potatoes |
2 tablespoons butter |
1 onion, chopped |
1 clove garlic, minced |
3/4 cup milk |
salt & pepper |
1/4 teaspoon nutmeg |
8 ounces bacon, cooked crisp and crumbled |
1 cup grated cheddar cheese |
2 tablespoons chopped fresh chives or 2 tablespoons green onions |
1 tablespoon butter, melted |
Directions:
1. Preheat oven to 400. 2. Bake potatoes until tender (45- 60 min). 3. Heat butter in skillet. 4. Cook onion and garlic until tender but not brown. 5. Stir in milk. 6. Heat. 7. Add salt& pepper& nutmeg. 8. Cut off the top third of the potatoes. 9. Scoop out potatoes leaving 1/4 shell. 10. Beat potatoes til smooth. 11. Mix in milk mixture. 12. Stir in bacon, cheese and chives. 13. Adjust seasoning if necessary. 14. Spoon mashed potatoes back into potato skins. 15. Brush top with melted butter. 16. Before serving, bake in a preheated oven (400) for 15 minutes or until heated throughly. |
