A wonderful breakfast muffin Ingredients:
1 1/3 cups flour |
1 cup quick oats |
1/2 cup firmly packed light brown sugar |
1 tbsp. baking powder |
1 tsp. cinnamon |
1/2 tsp. salt |
2/3 cup milk |
1/3 cup apple juice |
1/4 cup vegetable oil |
1 egg, beaten |
1/4 cup finely chopped walnuts |
3/4 cup peeled chopped apple (about 1 medium) |
Directions:
1. Heat oven to 400*. Line 12 medium muffin cups with paper baking cups. In a large bowl, combine dry ingredients. Add remaining ingredients except nuts and apple, mixing just until moistened. Gently fold in nuts and apples. Fill paper liners 2/3 full. Bake 20-22 minutes or until golden brown. |
