Double Apple Corn Muffins |

Aunt Eileen from York, PA, gave this to my momma years and years ago. Moist appley corny muffins. Ingredients:
1 cup flour |
1 cup cornmeal |
1/4 cup of sugar |
1 tbsp of baking powder |
1/2 tsp of salt |
2 eggs |
2/3 cup of applesauce |
1/2 cup of milk |
1/4 cup of oil |
1 large apple, peeled, chopped |
Directions:
1. Sift the dry ingredients, flour, cornmeal, sugar, b.p. and salt. 2. Combine eggs, applesauce, milk and oil. 3. Stir in dry ingredients. 4. Fold in chopped apples 5. Bake 425 degrees for 25 minutes, until they test done.with a toothpick |
