This is my version of Dorset Apple Cake based on an old sounding recipe I found online. I've converted it to metric and made the recipe more specific. Ingredients:
225 g flour |
110 g butter |
1 teaspoon baking powder |
110 g sugar |
225 g apples, peeled and chopped (use bramleys or softmushy cooking apples) |
50 g raisins |
1 egg, beaten |
2 tablespoons milk |
sugar, to sprinkle |
Directions:
1. Rub butter into flour. 2. Stir in baking powder. 3. In a separate bowl, stir sugar into the chopped apples and raisins. 4. Add egg and milk and mix gently to a firm sticky dough, add sugared apple pieces & raisins and mix again. 5. Scrape into greased or buttered 8x8inch cake pan. Wet hands and press mixture into pan. 6. Bake for 30minutes at 330F, 165°C. |
