Dorothy's Convent Meatloaf With Potatoes |

Found this recipe, sounds good. Trying out! Ingredients:
2 lbs ground beef |
1 small onion, diced |
1 cup soda cracker crumbs |
salt |
pepper |
2 eggs |
1 tablespoon worcestershire sauce |
2/3 cup milk |
6 -8 medium potatoes |
1 (10 3/4 ounce) can cream of tomato soup |
0.5 (14 ounce) can milk |
Directions:
1. Mix together meat, onion, crumbs, 1 teaspoon salt (or to taste), 1/8 teaspoon pepper, eggs, Worcestershire sauce and 2/3 cup milk. 2. Form into oval shaped loaf. 3. Slice potatoes into bottom of 3 quart baking dish, adding salt and pepper to taste. 4. Place meatloaf on top of raw potatoes. 5. Mix soup with 1/2 soup can milk; bring to boil and pour over meatloaf. 6. Bake in 350 degree oven 1 1/2 hours, covered. 7. Uncover and bake 15 minutes more to brown meat. |
