Doreen's You Soup - Curried Split Pea

This is a yummy diversion from typical split pea soup from the You On A Diet book, page 270, except that I used chicken stock instead of vegetable. Also used cilantro instead of parsley.
Ingredients:
1 tbsp olive oil
1 medium onion, chopped
1 carrot, chopped
4 garlic cloves, crushed then sliced
32 oz. chicken stock
32 oz. water
1 cup dried yellow split peas (soak overnight first)
1 tsp curry powder
1 tsp ground cumin
1/4 c cilantro (chopped loosely)
Directions:
1. Heat oil in large saucepan over medium-high heat.
2. Add onions and cook 5 minutes, stirring occasionally.
3. Add carrot and garlic and cook until softened, about 5 min.
4. Add remaining ingredients and bring to a boil.
5. Reduce heat, simmer uncovered for 45 minutes until peas are tender.
6. Stir with a wisk until peas are well mashed.
7. Serve with a few leaves of cilantro garnishing top
8. Leftovers: Ladle remaining soup into several 8 oz. containers for hardy You Soup snacks.
