Oh-so high in calories and sodium, but a yummy treat once in awhile. Ingredients:
15 tortilla chips |
6 oz. refried beans |
8 oz. pepper jack cheese, shredded |
8 oz. cheddar cheese, shredded |
6 oz. steak, sliced in thin strips |
1/2 medium avocado, cut in thin 1/2 cubes |
2 jalapeno peppers, slice in rings |
1/3 roma tomato, chop small |
1/10 medium onion, chopped thin |
1 tbsp. cilantro, chopped |
Directions:
1. Preheat oven to 350 degrees 2. Lay down tortilla chips in round baking dish 3. Spoon out glops of refried beans 4. Sprinkle 1/2 pepper jack on top of beans 5. Lay down sliced steak, covering chips completely 6. Sprinkle remaining pepper jack on top of steak 7. Sprinkle 2/3 of cilantro and all of the onions 8. Sprinkle cheddar cheese 9. Garnish with tomatoes, remaining cilantro and jalapeno rings 10. Bake for 30-35 minutes until cheese is bubbling. 11. Let cool for 5 minutes. 12. Place avocado evenly over top. 13. Cut with large pizza cutter 4 pieces. |
