Doreen's Italian Chicken Bake |

This is a take on Richard Simmon's recipe from the 80s. It's excellent when placed on a bed of rice with the juice from the casserole dish poured onto the rice. Ingredients:
24 oz. chicken breast |
8 oz. tomato sauce |
4 oz. mozzarella cheese, sliced thin |
6 mushrooms, sliced thin |
1/4 small onion |
1/2 tsp. italian seasoning |
1/8 tsp. salt |
1/8 tsp. pepper |
1/8 tsp. garlic powder |
Directions:
1. Preheat over 375 degrees 2. Salt, pepper and garlic powder chicken on both sides 3. Place in 2.5 - 3 high glass baking dish 4. In separate bowl stir together small can of tomato sauce with Italian Seasoning 5. Pour evenly over all the chicken leaving nothing exposed 6. Cover dish with glass lid or aluminum foil 7. Bake for 35 minutes 8. Take out of oven and place sliced mozzarella over chicken 9. Place dish back in over without cover 10. Increase heat to Broil - low for 10 minutes until cheese is browned in spots |
