I found this recipe tonight and it sounded good... thought i would share.... the muffins have a crumb topping... the recipe is from the: White Lace Inn 16 N 5th Avenue Sturgeon Bay, WI 54235-1795 Ingredients:
4 cups flour |
2 cups sugar |
2 tablespoons baking powder |
1 teaspoon cinnamon |
3 cups frozen & rinsed door county cherries ( any brand will be fine) |
1 cup butter (melted) |
1 cup milk |
4 eggs |
1 teaspoon vanilla |
topping |
1 cup flour |
1/3 cup soft butter |
1/2 cup sugar |
1/2 teaspoon cinnamon |
Directions:
1. Preheat oven to 425 degrees. 2. Combine dry ingredients and blend. 3. In separate bowl, toss 1 tbs. of dry ingredients with cherries. 4. In a large bowl, mix butter, milk, eggs and vanilla. Then add dry ingredients and stir until well moistened. Stir in cherries. 5. Spoon batter into muffin tins to about 3/4 full and sprinkle with topping mixture. Bake at 425 degrees for 15-20 minutes. Makes about 2 dozen muffins. 6. Optional topping - sprinkle with suger. |
