The best meatballs I have ever eaten were from a friend who is a fabulous cook. Hope you like them. One note on the bread crumbs, if you use extra lean beef you will only need about 1 cup of the breadcrumbs if you use a fattier ground beef you will need more. All depends on the fat content. Ingredients:
2 lbs hamburger |
4 ounces hot sausage, without casing |
1 tablespoon italian seasoning |
1 teaspoon salt |
1/2 cup romano cheese |
2 garlic cloves |
2 cups breadcrumbs |
1/4 cup parsley, chopped |
1 tablespoon pepper |
2 eggs |
1/4 loaf italian bread, cubed |
1/2 cup parmesan cheese |
Directions:
1. To start soak the bread in milk or water enough to cover it. 2. Mix the hamburger, parsley, Italian seasoning, pepper, salt, hot sausage, cheeses, eggs and garlic (all ingredients except bread and bread crumbs). 3. Squeeze out the water or milk and add to the other ingredients. 4. Then add the bread crumbs,1 cup at a time until mixture holds its shape. 5. Form into balls and put into a preheated 400 oven for about 20 to 25 minutes. |
