This is a healthy quick and easy stovetop beef stew, which is always a hit. Great one meal dish and easy to prepare and cook. Serve with fresh crusty sour dough bread Ingredients:
2 lbs stew meat cut up in 1 inch cubes |
2 tbs flour |
2 tbs olive oil |
16 oz can of beef broth |
64 oz v8 tomato vegetable juice (large) spicy if desired. |
1 whole bay leaf |
1 tbs basil leaves |
1 tsp ground black pepper |
1 tsp cayenne red pepper (optional) |
2 large garlic cloves |
1 large diced onion |
6 med sized white potatoes, peeled and cut into 1 inch cubes |
4 celery stalks sliced |
4 carrots sliced |
1 pkg fresh sliced mushrooms |
1 pkg frozen cut green beens |
1/4 cup grated parmesan cheese |
1 freshly baked sour dough loaf |
Directions:
1. Coat stew meat with flour 2. In large stew pot, brown stew meat lightly in oil. 3. Stir in beef broth and V8 Juice. 4. Add 2 garlic cloves, knife slit for flavor. 5. Add bay leaf, basil, and pepper and stir. 6. Simmer for 1.5 hours until meat is tender. 7. Add in onion, potatoes, celery, carrots, mushrooms, green beans and simmer for 45 minutes until vegetables are cooked. 8. Serve in stew bowl and sprinkle with parmesan cheese. 9. Enjoy with some fresh cut slices of sour dough bread. (butter optional) |
