I enjoy the complexity of flavors in this recipe. Ingredients:
1 cup uncooked rice |
1 cup yellow onion, chopped |
1 cup olive oil |
3 tablespoons olive oil |
1/2 cup pine nuts |
1/4 cup fresh parsley, chopped |
3 scallions, chopped |
2 tablespoons fresh mint |
2 tablespoons fresh dill |
1 teaspoon cinnamon |
1/2 teaspoon allspice |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 cup chicken stock |
3/4 cup lemon juice |
leafy greens |
Directions:
1. Combine all ingredients (first 12). With a 16 oz jar of grape leaves, remove stems, place shiny side down and wrap 1 Tbsp of mixture in leaf. Layer in a pot along w/ leafy greens & simmer in stock & lemon juice 1 hour. Allow to cool before transfering. |
