An inexpensive way for you to start a hearty Italian meal. When it comes to marinated vegetables such as artichokes and red bell peppers, dollar stores are an antipasto-lover's-dream. Ingredients:
1 jar marinated mushrooms, drained |
1 jar red bell peppers, drained and sliced |
1 or 2 jars marinated vegetables, drained |
green pitted and black pitted olives, drained |
crackers, for serving |
1 package fresh (del giorno, i use) mozzarella balls |
1 handful fresh basil leaves washed and dried |
1 baguette, sliced and toasted |
olive oil (sprinkled on or served on the table) |
kosher salt and pepper mill black pepper |
Directions:
1. On a large oblong platter, arrange serving crackers of choice, vegetables, mozzarella and baguette slices. 2. If desired, drizzle veggies and cheese with olive oil and sprinkle with salt and pepper. 3. Buon Appetito! |
