These muffins are a favorite treat of my grand-dog, Wiley. Although a picky eater, he devours these whenever I make them. The batter is more like a sticky dough, so you have to spoon it into the muffin tins. If using mini muffin tins, be sure to reduce the cooking time. Ingredients:
2 cups flour |
1 cup milk |
1 egg, slightly beaten |
2 tablespoons beef bouillon granules (or cubes, crushed) or 2 tablespoons chicken bouillon granules (or cubes, crushed) |
2 teaspoons baking powder |
Directions:
1. Pre-heat oven to 450 degrees. 2. Grease muffin tins if not using paper liners. 3. In a large bowl, mix together the dry ingredients. 4. In a small bowl, mix together the milk and egg. 5. Pour the milk/egg mixture into the dry ingredients and stir until moistened. 6. Spoon batter into prepared muffin tins, filling each half full. 7. Bake 15-20 minutes or until golden brown and a toothpick inserted in the center comes out clean. 8. Let rest in tins for 5 minutes, then finish cooling on cooling rack. 9. Makes 12-15 muffins. 10. NOTE: You can vary this recipe by adding some bacon bits and/or sprinkling shredded cheese on top of muffins during last 5 minutes of cooking time. |
