Baked beans with a twist - pineapple, pecans, warm spices and a crunchy topping. This would make a great potluck dish! Ingredients:
1/4 cup light molasses |
1/4 teaspoon ground cinnamon |
1/4 teaspoon ground ginger |
1/8 teaspoon ground nutmeg |
1/2 teaspoon salt |
2 (16 ounce) cans vegetarian beans |
1 (8 ounce) can pineapple chunks |
2 tablespoons pineapple juice |
1/2 teaspoon lemon juice |
1/2 cup pecans, chopped |
1 tablespoon light molasses |
1 tablespoon butter, melted |
Directions:
1. Combine 1/4 cup molasses, cinnamon, ginger, nutmeg and salt in a 1 1/2 quart casserole. Add beans, pineapple, pineapple juice, lemon juice and 1/4 cup of the pecans. Mix well. In cup, combine remaining pecans, 1 tablespoons molasses and butter). Spoon around edge of beans (optional). Bake at 350 degrees for 40-45 minutes or until beans are bubbly. |
