Dixie Green Beans and Potatoes |

Traditional southern method for cooking green beans. Great way to use leftover ham. Can substitute smoked ham hocks or bacon. Season with salt according to saltiness of meat. Ingredients:
2 lbs fresh green beans, tips removed and cut in half |
1 1/2 lbs new potatoes, cut in half if large |
1 1/2 cups cooked ham, cubed |
1/2 cup onion, diced |
1/2 tablespoon rosemary |
1/2 tablespoon lemon pepper |
2 cups water |
Directions:
1. In a medium hot pot cook ham and onion until it begins to brown (about 4-5 minutes). 2. Add water and stir scraping brown bits off bottom of pan. 3. Add green beans, potatoes, and seasonings. 4. Cover and cook 25-35 minutes until fork tender. |
