These cup cakes are little bites of heaven. Moist and super delicious. From 'Kitchen for Kids' they are great to bake along side little ones. Ingredients:
2 cups all-purpose flour |
1 tablespoon baking powder |
1/4 teaspoon salt |
1 1/2 cups sugar |
2/3 cup butter, softened |
2 eggs |
1 1/2 cups 1% low-fat milk |
1 teaspoon vanilla extract (to taste) |
Directions:
1. preheat oven to 350°F. 2. Line 2 muffin tins with paper liners 3. Sift flour, baking powder and salt int a bowl and mix. 4. In another bowl cream sugar and butter, stir in eggs. 5. Gradually add milk and vanilla and spoon flour mixture in until all mixed and smooth. 6. Spoon batter into liners to about 3/4 full. 7. Bake 27-28 min until tops are golden and spring back or a toothpick comes out clean. |
