Divine Grilled Rosemary Potatoes |

These are very simple and are delicious grilled or roasted. Great side for my Kick-Ass Black Bean Burgers. Ingredients:
2 large potatoes - cubed |
small onion - cubed |
few cloves garlic - pull them out and spread on bread after they lend their touch to the potatoes |
2 rosemary sprigs - can pull leaves off or grill whole |
olive oil to coat |
salt and pepper to sprinkle over the tops |
Directions:
1. Grab large piece of aluminum foil if grilling, or pan for roasting, coat with a bit of oil 2. Cube potatoes (or slice thin if you prefer) even sizing is the key for even cooking, toss on foil or in pan 3. cube onions, toss on 4. peel garlic cloves, toss on 5. sprinkle pulled rosemary leaves or full sprigs on top 6. drizzle with a bit more olive oil (not too much, they'll steam as well 7. salt and grind fresh pepper above it all 8. wrap and grill/roast |
