Divine Chocolate Cheesecake |

If you love chocolate, then this is the cheesecake for you. It is so deliciously rich. Great served with whipped cream. Ingredients:

125g chocolate flavoured biscuits, crushed |
60g melted butter |

1 cup cream |
2 eggs, separated |
pinch of salt |
1/2 cup sugar |
1 tsp vanilla essence |
125g dark chocolate |
250g cream cheese |
Directions:
1. Grease a 20cm springform pan. 2. Combine the crushed biscuits and the melted butter and press into the base of the pan. 3. Chill until firm. 4. Whip the cream and refrigerate until ready to use. 5. Beat the egg-whites with the salt until peaks form. 6. Add 1/4 cup of sugar to the egg whites and beat until sugar has dissolved. Refrigerate until ready to use. 7. Place the cream cheese in a food processor and process until smooth. 8. Add 1/4 cup of sugar and the vanilla. 9. Meanwhile, melt the chocolate, in a bowl, over hot water. 10. Lightly beat the egg yolks and add to the processor. 11. Add the melted chocolate to the processor and process until combined. 12. Fold the egg whites into the mixture until combined. 13. Gently fold through the whipped cream. 14. Pour onto the prepared base, in the tin, and refrigerate until set. |
