This is Slap-Yo-Mama Good! Ingredients:
1 box cornbread mix |
1 egg |
1 medium (meaty) smoked neckbone, cooked and meat pulled from bone and shredded |
1/2 cup cheddar cheese, shredded |
1/3 cup milk |
1 tbsp vinegar from jar of jalapenos or hot peppers |
1/4 cup oil |
Directions:
1. Preheat oven to 350 degrees 2. Mix milk and vinegar together, set aside 3. Pour oil in small cast iron skillet, place in heated oven 4. Mix cornbread mix, cheese, meat, egg, and milk 5. Remove skillet from oven - pour hot oil in cornbread mix - stir just until incorporated 6. Spoon cornbread mix into cast iron skillet 7. Cook until golden brown - about 20-25 minutes. |
