Generally authentic dirty rice is dirtied with ground chicken livers, but sausage does the trick too. Great with any dish, or if you love rice as much as I do, alone for lunch! Ingredients:
1/2 lb. bulk italian sausage |
1 tsp. olive oil |
1/2 c. onion sliced |
1/4 c. celery diced |
1/3 c. red bell pepper diced |
1 tbsp. minced garlic |
1 1/2 c. white rice |
3 c. chicken broth |
1 bay leaf |
salt & cayenne pepper to taste |
1/2 c scallions chopped |
Directions:
1. Saute sausage in oil in large saute pan over med- high heat 2-3 minutes. 2. Add onion celery, bell pepper, and garlic. 3. Cook until soft another 1-2 minures. 4. Stir in rice, to caot with flavors cook 1 min. 5. Add bay leaf, and brith and seasonings and bring to a boil. 6. Reduce heat to low, cover and simmer 25 minutes longer. 7. Let stand 5 minutes, fluff with a fork, and stir in scallions |
