Made for Zaar World Tour 5 - by the Cooks With Dirty Faces. Like our team this is just a little out of the ordinary with the combo or sweet and spicy, and the crunch from the cuc and jicama. Watch out for flying salsa when everyone digs in, or you'll have a dirty face too!
Ingredients:
1 1/2 cups tomatoes, diced (must be ripe)
3/4 cup pineapple, diced (see note)
1/2 medium red onion, finely chopped
1 jalapeno chile, minced (less if you like it mild)
1 small cucumber, peeled and diced (about 1 cup)
3 tablespoons fresh cilantro leaves, chopped
3 tablespoons fresh lime juice
1 -2 garlic clove, pressed
1/3 cup jicama, diced small
salt and pepper
Directions:
1. Combine all of the ingredients in a bowl. Season to taste with salt and pepper.
2. Note Whether you start with fresh spears, or canned rings or chunks of pineapple, you should gently chop them to a medium dice.
