Dipped Gingerbread Cookies |

These are sooo good with a hot cup of tea. Ingredients:
2 c sugar |
1 1/2 c oil |
2 eggs |
1/2 c molasses |
4 c flour |
4 tsp baking soda |
1 tbl ground ginger |
2 tsp cinnamon |
1 tsp salt |
additional sugar |
2 12 ounce pkg white baking chips |
1/4 c shortening |
Directions:
1. Combine sugar, oil & eggs; mix well 2. Stir in molasses. 3. Combine dry ingredients and add to creamed mixture and blend well 4. Shape into 3/4 inch balls and roll in sugar 5. Place 2” apart on ungreased cookie sheets 6. Bake at 350 for 10-12 mins. or until cookie springs back when touched 7. Cool 8. Melt chips and shortening together in small saucepan 9. Dip cookies 1/2 way , shake off excess 10. Place on wax paper lined sheets or racks until set |
