I delightful blend of white chocolate and cherrys. A must try for the cherry and chocolate lover alike. Ingredients:
dipped cherry cookies |
2 1/2 cups all-purpose flour |
3/4 cup sugar |
1 cup cold butter, cubed |
1/2 cup finely chopped maraschino cherries, drained |
12 squares (1 oz. each) white baking chocolate, finely chopped |
1/2 tsp. almond extract |
2 tsp. shortening |
coarse sugar, red edible glitter |
Directions:
1. In a large bowl, combine flour, 1/2 cup sugar; cut in butter until crumbly. 2. Knead in cherries, 2/3 cup white chocolate, extract until dough forms a ball. 3. Shape into 3/4 balls. 4. Place 2 apart on ungreased baking sheets. 5. Flatten slightly with a glass dipped in remaining sugar. 6. Bake at 325 for 10-12 minutes or until edges are lightly browned. Remove to wire racks to cool. 7. In a microwave, melt shortening, remaining white chocolate at 70% 8. power 1 minute; stir. 9. Microwave at additional 10-20 second intervals, stirring until smooth. 10. Dip half of each cookie into chocolate; allow excess to drip off. 11. Sprinkle with coarse sugar, edible glitter. 12. Place on waxed paper until set. 13. Store in an airtight container. |
