This is a recipe for a very basic dinner salad. I love a salad and all dinner salads are not equal! This is a side salad that everyone comments on during the meal. It is wonderful! Ingredients:
4 cups spring mix (suggest marketside spring mix, baby greens and radicchio organic available at walmart and food lion) |
1/2 medium cucumber peeled and sliced |
8 petite carrots (the kind sold in ready to eat bags) |
6 - 8 grape tomatoes cut in half lengthwise |
1/2 cup shredded cheese (your favorite - cheddar, colby, etc.) grated |
1/2 cup croutons (your favorite) |
fresh ground black pepper |
salad dressing of choice |
bacon - cooked and crumbled (optional) |
any other vegetable that you love on a salad |
Directions:
1. Place 2 cups lettuce on each 2 chilled plates. 2. Add next 5 ingredients, half on each plate, in any decorative manner you like. 3. Serve with pepper grinder, bacon (optional), and salad dressing on side. 4. *If there will be a delay in serving keep salad chilled and place croutons on plate just before serving. |
