Similar to restaurant yeast rolls. Ingredients:
4 teaspoons active dry yeast |
1/2 cup warm water (105 degrees) |
2 cups milk (scalded and cooled to 105 degrees) |
3 tablespoons butter, melted |
1/2 cup sugar |
7 -8 cups flour |
2 eggs |
2 teaspoons salt |
Directions:
1. Dissolve yeast in warm water with a teaspoon of sugar; let stand until frothy. 2. Combine yeast mixture, milk, sugar and enough flour to make a medium batter (about the consistency of pancake batter). 3. Beat thoroughly. 4. Add melted butter, eggs and salt. Beat well. 5. Add enough flour to form a soft dough. 6. Sprinkle a small amount of flour onto counter and let dough rest. Meanwhile, grease a bowl. 7. Knead dough until smooth and put in greased bowl; turn over to grease top. 8. Cover and let rise in a warm place until double in size. 9. Punch down. 10. Turn out onto a floured surface. 11. Divide into portions into single serving rolls; let rest 10 minutes. Shape dough into desired form. 12. Place on greased baking sheets. Let rise until doubled. 13. Bake at 350 degrees for 10-15 minutes or until golden brown. 14. Baste with butter. |
