Found in Count Our Blessings cookbook. Ingredients:
2 onions, chopped |
2 garlic cloves, chopped |
1 tablespoon oil |
1 tablespoon flour |
1 tomato, chopped |
2 teaspoons curry powder |
2 cups bouillon |
0.5 (6 ounce) can tomato paste |
lemon juice, to taste |
leftover meat, chicken, beef or pork, chopped |
golden raisin (optional) |
mushroom (optional) |
hot cooked rice |
Directions:
1. Saute onion and garlic in oil until soft. Add flour, tomato and curry and saute together. 2. Add bouillon, tomato paste and lemon juice, and mix. 3. Stir in chopped meat. 4. Stir in raisins and mushrooms, if desired. 5. Heat through. Serve over rice. |
