Dilly Lamb And Potato Stew |

A simple lamb and potato dish made easy in the slow cooker. Great served with an onion/dill bread and simple baby greens salad. Ingredients:
10 red potatoes, cubed |
1 onion, chopped |
2 carrots, shredded |
6-8 sprigs fresh dill or about 2t dried |
4lbs lamb stew meat, cut into bite size pieces |
1 1/4 cups vegetable, pork or chicken stock |
1t cornstarch |
touch of honey(about 2t) |
1 cup half and half |
juice from 1 lemon |
salt and pepper |
Directions:
1. Add potatoes, onion, carrots, lamb, dill and stock to slow cooker. 2. Cook on low 6-8 hours. 3. Add cornstarch to a small amount of water to make slurry. 4. When stew is tender, add slurry and honey and cook, uncovered, until juices thicken slightly, about 30-45 minutes longer. 5. Add half and half and lemon juice and stir to combine just before serving. |
