I wanted to make a side dish with an unexpected twist. If you like dill, then you'll love this! Ingredients:
8 oz frozen corn |
1/2 cup onion diced |
1 tablespoon minced garlic (about 3 cloves) |
1/2 tablespoon dried chives |
1/2 tablespoon dried dill |
1/2 cup chicken stock |
1 tablespoon butter |
1 tablespoon extra virgin olive oil |
salt and pepper to taste |
Directions:
1. In a saute pan on medium heat, add olive oil and butter 2. When butter melts, add onion and cook until translucent 3. Add garlic and cook for about a minute 4. Add corn and cook for about 5 minutes, until corn is warmed through 5. Add stock, dill and chives, stir until combined 6. Add salt and pepper to taste 7. Cook until liquid has reduced by half and serve |
