Dilled Tuna And Potato Salad |

This is one of my all time favorite salads. I'm a huge tuna fan anyway and the dill makes it superb. I make this often for my lunch and never get tired of it Enjoy Ingredients:
3 medium red potatoes (about 1 pound) |
1/2 cup mayonnaise |
1/2 cup plain yogurt |
1 tablespoon snipped fresh dill |
1 tablespoon milk |
1/2 teaspoon finely shredded lemon peel |
1/4 teaspoon salt |
1 clove garlic minced |
1 cup chopped cucumber |
1/4 cup sliced green onions |
1/4 cup coarsely chopped radishes |
9 ounce can chunk white tuna in water rained and broken into chunks |
2 hard cooked eggs chopped |
6 cups shredded red leaf lettuce |
Directions:
1. Scrub potatoes then cut into 1/2 cubes. 2. In a covered medium saucepan cook potatoes in small amount of boiling water 12 minutes. 3. Drain and cool slightly. 4. Meanwhile in a large bowl stir together mayonnaise, yogurt, dill, milk, peel, salt and garlic. 5. Stir in cucumber, green onions and radishes. 6. Add cooked potatoes, tuna and chopped eggs then toss gently to coat. 7. Cover and chill 6 hours then line dinner plates with shredded lettuce. 8. Gently stir tuna mixture and spoon on top of lettuce. |
