Dilled Ranch Potato Salad |

One of my favorite potato salads. When you get tired of the same old regular potato salad at the end of the season, mix it up with this differently delicious one. Came up with this one a bunch of years ago and its still one of the family's favorites. Ingredients:
6 medium baking potatoes, boiled in their jackets until just done - do not overcook |
3 eggs, cooked with the potatoes |
1/2 green pepper, diced small |
1 stalk celery, diced fine |
1/2 medium onion, diced fine |
1/2 cup fresh dill, just the leaves, finely minced |
2/3 cup sour cream |
2/3 cup mayonnaise, hellmans |
1 packet ranch-style dressing mix, hidden valley |
jane's crazy mix up salt, to taste |
freshly ground black pepper, to taste |
Directions:
1. While potatoes are still hot, but cool enough to handle, peel, cut potatoes in half and then slice about 1/8 thick. Chop hard-boiled eggs. Add both to big mixing bowl. Add the rest of the ingredients. Taste for seasoning. Serve. |
