DILLED POTATO APPLE SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Montgomery Estate in The Woodlands, Texas in 1988. Ingredients:
4 small red potatoes |
2 cups plus 1 teaspoon water divided |
1/2 cup diagonal cut snow peas |
1/2 cup chopped celery |
2 tablespoons thinly sliced green onions |
1 medium unpeeled red apple cut into thin slices |
3 tablespoons white wine vinegar |
1 tablespoon vegetable oil |
1 teaspoon dill weed |
1/2 teaspoon sugar |
Directions:
1. Combine potatoes and 2 cups water in a medium sauce pain and bring to a boil. 2. Cover saucepan then reduce heat and simmer 15 minutes. 3. Drain and allow to cool. Then peel and cut into 1/4 slices and set aside. 4. Cook peas in small amount of boiling water 15 seconds then drain and rinse under cold water. 5. Combine potatoes peas, celery, green onions and apple slices and toss well. 6. Combine remaining water, vinegar, oil, dill weed, sugar and a dash of salt. 7. Add to potato mixture tossing gently to coat then cover and chill 1 hour. |
