Ingredients:
1 1/2 pounds yukon gold potatoes, peeled and sliced into 1/4-inch slices |
1/2 cup 1% low-fat milk, warmed |
1/2 cup (2 ounces) shredded reduced-fat sharp cheddar cheese |
1 tablespoon light stick butter, softened |
1/4 teaspoon dried dill |
3/4 teaspoon salt |
1/8 teaspoon pepper |
2 tablespoons finely chopped fresh parsley |
Directions:
1. Place potato in a large saucepan; add water to cover. Bring to a boil; partially cover, reduce heat, and simmer 12 minutes or until tender. Drain potatoes, and return to saucepan. 2. Place saucepan over very low heat; add milk and next 5 ingredients. Mash potatoes with a potato masher; stir in parsley. |
