Dilled Green Beans In Sour Cream |

From an old magazine clipping. Perfect for the holidays. A nice change from the usual green bean casserole. Ingredients:
1 pound green beans (fresh or frozen) |
2 tablespoons parsley, chopped |
1 small onion, finely chopped (or to taste) |
2 tablespoons butter or margarine |
1 tablespoon all-purpose flour |
1 tablespoon fresh dill, minced or 1 teaspoon dried dill weed |
1 teaspoon granulated sugar |
1 teaspoon cider vinegar |
salt and ground black pepper to taste |
1 cup sour cream. |
Directions:
1. Cook green beans in boiling salted water just until tender crisp. 2. Drain beans, reserving 1/2 cup cooking water. 3. In large skillet, melt butter. 4. Saute onion and parsley until onion is softened. 5. Stir in flour to make a roux and cook until bubbly. 6. Slowly add reserved bean cooking water and cook over medium heat until sauce thickens. 7. Remove from heat and stir in remaining ingredients. |
