3 cups chicken broth |
1 (14 1/2 ounce) can diced tomatoes |
1 lb carrot, sliced |
1 1/2 cups chopped onions |
1 medium idaho potato, peeled and cubed |
2 garlic cloves, minced |
1 1/2 teaspoons dill |
2 -3 tablespoons lemon juice |
salt and pepper |
6 tablespoons plain yogurt |
Directions:
1. Combine all ingredients, except lemon juice, salt, pepper and yogurt in slow cooker. 2. Cover and cook on high 3-4 hours. 3. Process soup in food processor or blender until smooth. 4. Season to taste with lemon juice, salt and pepper. Serve soup warm or chilled and garnished with a dollop of yogurt. |
