Dilled Barley And Green Bean Salad |

This recipe comes from the Anderson Estate that I purchased from the Montgomery Estate in Wylie, Texas in 1991. Enjoy Ingredients:
1 cup pearl barley rinsed |
10 ounce fresh green beans |
2 medium carrots thinly sliced |
1/4 cup minced fresh dill |
1/2 cup natural low fat vinaigrette |
Directions:
1. In a saucepan bring 3 cups water to a rapid simmer then stir in the barley. 2. Cover and simmer gently until water is absorbed about 35 minutes. 3. Remove from heat and set aside uncovered until barley reaches room temperature. 4. Meanwhile trim beans and cut them in half then steam 5 minutes and rinse under cold water. 5. Combine cooled barley and green beans with remaining ingredients in serving bowl and toss. 6. Serve immediately or cover and refrigerate until needed. |
