Dill-lemon Potatoes And Green Peas |

Fresh peas can be used instead of frozen, but not canned. Use spring onions and fresh dill to make this a really spring-y dish. Ingredients:
2-3 medium potatoes, peeled, cut in chunks |
1/2 cup chicken broth |
onion powder, to taste |
1 cup frozen peas, defrosted |
2 tablespoons lemon juice |
1 tablespoon of flour |
fresh snipped dill |
Directions:
1. Cook potatoes in chicken broth for 10 minutes or until almost tender. Increase heat to high, stir in peas, and season with onion powder and salt. Bring to full boil, reduce heat, cover, and simmer for another 10 minutes, until potatoes are fairly soft. 2. In a small bowl, combine lemon juice and flour and stir until the flour dissolves. Pour the lemon mixture into the pot, add more water if necessary. Stir, cover, and cook 5 minutes more. 3. Turn off heat, add the fresh snipped dill. 4. Serve hot or warm. |
