The hot and hazy days of August call for a more laidback approach to entertaining. This easy make-ahead appetizer fits the bill beautifully. Cream cheese and cheddar cheese, mayonnaise, garlic dill pickles, and seasonings are all combined and then rolled in walnuts and parsley. Perfect served alongside a variety of crackers and flatbreads. Ingredients:
1 (250 g) package cream cheese, softened |
1 1/2 cups old cheddar cheese, grated |
1/2 cup bick's garlic dill pickles, finely chopped |
1/4 cup green onion, finely chopped |
2 tablespoons mayonnaise |
1 tablespoon worcestershire sauce |
1/2 cup walnuts, finely chopped |
2 tablespoons parsley, finely chopped (fresh or dried) |
Directions:
1. Combine first 5 ingredients, beating until smooth. 2. Cover and chill until firm, 2 hours or overnight. Shape into a ball, and roll in a mixture of nuts and parsley. 3. Serve with assorted crackers. |
