This makes a wonderful St. Patrick's Day dish, but you needn't wait until then to enjoy it. Ingredients:
1 head (about 1 1/4 pounds) cabbage |
1 small onion, thinly sliced |
1 carrot, finely chopped |
1 tsp dried dill |
2/3 cup chicken stock |
Directions:
1. Snap off any tough outer leaves from the cabbage and slice off the stem. Cut the cabbage in half through the core, then slice each half into quarters, making 8 wedges. 2. Arrange the wedges into 2 concentric circles in a 9 glass pie plate. (The dish will be pretty full). Sprinkle with the onions, carrots and dill. Pour on the stock. 3. Steam the cabbage and other vegetables until tender, about 20 minutes. Drain. Sprinkle with the dill. 4.
