Dill and Orange Miso Spread |

This recipe is from the wonderful book, The Bread & Circus Whole Food Bible. They suggest that you serve it with grated carrot and watercress on pitas, with sprouts on rice cakes or with raw vegetables. It could also be used as a sauce for udon or soba noodles or sauteed veggies. Ingredients:
1 cup tahini |
1/4 cup white miso |
3 tablespoons fresh dill, chopped |
2 tablespoons fresh orange juice |
Directions:
1. Combine all ingredients in a medium saucepan over medium heat, stirring well to blend. 2. Simmer gently for 3 minutes, until the desired consistancy is reached. 3. Add more water if needed (more for sauce, less for spread.). 4. I highly recommend not adding the miso until the end and you have finished simmering the sauce, as heating it destroys the beneficial enzymes that make it so healthful. |
