Dijon Thyme Broccoli With Pine Nuts |

Quick side dish ready in 15 minutes. Ingredients:
5 cups raw broccoli florets |
1 tablespoon minced shallot |
2 tablespoons olive oil |
1 tablespoon fresh lemon juice |
1 tablespoon dijon mustard |
2 teaspoons chopped fresh thyme |
2 tablespoons toasted pine nuts |
Directions:
1. Arrange broccoli in a steamer, steam covered for 4 minutes or until crisp-tender. Place broccoli in a large bowl. 2. Combine shallots, olive oil, lemon juice, dijon mustard, and fresh thyme in a bowl, and stir with a whisk. 3. Add broccoli, and pinenuts to the oil mixture, and toss. |
