Dijon-Potato Salad with Smoked Chicken Sausage |

Ingredients:
6 cups diced red potato (about 2 pounds) |
1 (12-ounce) package smoked chicken sausage, quartered lengthwise and sliced (such as gerhard's) |
1/2 cup finely chopped celery |
1/2 cup finely chopped red onion |
1/3 cup dijon mustard |
1 tablespoon fresh lemon juice |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
Directions:
1. Steam potato, covered, 10 minutes or until tender. Place a medium nonstick skillet over medium-high heat until hot. Add sausage; sauté 2 minutes. Combine potato and sausage in a large bowl. Add celery and remaining ingredients; toss well to coat. |
