Dijon Honey Mustard Roasted Potatoes |

I got bored with the stock-in-trade baked or mashed potatoes and decided to experiment and came up with this. I think this might also work as a cold potato salad. Ingredients:
6 medium red potatoes, chopped into bite-size pieces |
1 clove garlic, peeled and minced fine |
1/4 cup dijon mustard |
3 tablespoons honey |
Directions:
1. Place potatoes in a bowl. 2. Mix the garlic, mustard, and honey together and pour over potatoes and stir to coat Put into a shallow baking dish and bake at 400 F until fork tender (about 15 minutes). |
