Dijon Crumb Chicken

Ingredients:
2 eggs
2 tablespoons dijon mustard
1 cup seasoned breadcrumbs
1/2 cup grated parmesan cheese
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
4 boneless skinless chicken breast halves
3 tablespoons vegetable oil
Directions:
1. Beat eggs and mustard in a shallow bowl.
2. Combine bread crumbs, Parmesan cheese, garlic powder and onion powder in another shallow bowl.
3. With a meat mallet, flatten chicken to 1/4 inch thickness.
4. Dip each chicken piece in egg mixture, then into crumb mixture to coat thoroughly.
5. Heat oil in a large skillet, cook chicken over medium heat for 15-20 minutes, turning once, until chicken is golden brown.
