Dijon Cilantro Tuna Sandwiches |

Thought this sounded like a different alternative to my regular tuna sandwich. Recipe source: Bon Appetit (April, 2009) Ingredients:
1/2 cup plain nonfat yogurt |
6 tablespoons sweet pickle relish |
2 tablespoons dijon mustard |
2 tablespoons whole grain mustard |
2 (6 ounce) cans tuna in water, drained (i only use white tuna) |
1 cup celery, chopped |
1/2 cup red onion, chopped |
1/2 cup cilantro, chopped |
12 slices whole grain bread, toasted |
12 slices tomatoes |
lettuce leaf |
Directions:
1. In a bowl mix first 4 ingredients (yogurt - mustards); stir in tuna. 2. Stir in veggies (celery - cilantr). 3. Cover and chill for 30 minutes. 4. Spoon 1/2 cup tuna on 6 toasted bread slices, top with tomatoe slices and lettuce and the rest of the bread slices. 5. Cut sandwiches in half, if desired. |
