Dijon Chicken and Potatoes |

Thought this would be good over rice, But hubby's not a big fan of rice so we tried potatoes. Turned out pretty good nice change. Ingredients:
2 lbs chicken parts (legs, thighs, breast, you choose) |
black pepper |
1/4 cup flour |
1/4 teaspoon mrs. dash seasoning mix |
1/8-1/4 teaspoon garlic powder (optional) |
1 tablespoon canola oil |
1 medium onion, chopped |
1 1/2 lbs red potatoes, cut into 1/4 inch pieces |
1 (14 1/2 ounce) can low sodium chicken broth |
3 tablespoons dijon mustard |
1 1/2 cups frozen peas |
1 teaspoon dried parsley |
Directions:
1. Sprinkle chicken with pepper & Mrs. Dash. 2. Coat with flour. Reserve Excess. 3. In nonstick pan heat oil over medium-high heat. 4. Add chicken cook turning once, until browned. 5. Remove from pan. 6. Reduce heat to medium. 7. Add onions. 8. Cook stiring until softened about 5 minutes. 9. Stir in flour (& garlic powder if desired). 10. Cook 2 minutes. 11. Add potatoes. 12. Cook stirring until hot. 13. Add broth & mustard. 14. Bring to a boil. 15. Simmer 5 minutes. 16. Add chicken. 17. Bring to a boil. 18. Reduce heat to med-low. 19. Cover. 20. Simmer until chicken is cooked & potatoes are tender about 20-30 minutes. 21. Add peas cook until heated through about 2 minutes. 22. Sprinkle with parsley. |
