These are delightful beets that always get rave reviews when I serve them. Hope you enjoy as much as we do. Ingredients:
butter flavored vegetable cooking spray |
1/3 cup finely chopped white onion |
2 cloves garlic minced |
1/3 cup sour cream |
2 tablespoons dijon mustard |
3 teaspoons lemon juice |
1/4 teaspoon salt |
1/2 teaspoon white pepper |
1-1/2 pounds beets cooked peeled and sliced |
minced parsley for garnish |
Directions:
1. Spray small saucepan with cooking spray then heat over medium heat until hot.
2. Sauté onion and garlic until tender about 4 minutes.
3. Stir in sour cream, mustard and lemon juice then heat over low heat until hot.
4. Season with salt and pepper then spoon sour cream mixture over beets and stir gently.
5. Sprinkle with parsley then serve while warm.
